Test taking is no fun, but we do a couple things to help the students feel prepared and pumped up. Our spirit committee organizes little treats each morning with a note attached (smarties, star bursts, rulers, etc.).
As a third grade team, we roll out big block paper and have students sign a pledge with one thing they'll do during tests (eat breakfast, reread for answers).
I also make bracelets with my students that have acronyms. This year we did "LEARN" and each letter represented a test strategy. I have a copy over at my blog if you're interested.
